How To Make The Best Blueberry Buckle

Have you ever heard of or had a blueberry buckle? If not, let me enlighten you! Blueberry buckle is the most delicious coffee cake loaded with brown sugar and cinnamon yumminess on top! Otherwise known as streusel. You’re in luck, because today, I am going to share how to make the best blueberry buckle.

This old-fashion blueberry buckle is the kind of recipe that never goes out of style. Loaded with fresh blueberries and topped with a buttery cinnamon streusel, it’s perfect for summer mornings, backyard gatherings, or anytime you want something homemade and special. One bite and you’ll see why it’s a keeper!

Why Do They Call It Blueberry Buckle?

A Blueberry Buckle is called “buckle” because while it is baking the batter rises. The delicious crumb topping and the weight of the berries weighs the cake down, causing the surface of the cake to buckle. It’s similar to a coffee cake but with a more pronounced fruit filling and a thicker crumble topping.

Ingredients You’ll Need for Blueberry Buckle

  • 1/3 cup butter
  • 1 cup sugar
  • 1 egg
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 cups blueberries

The Streusel Topping – Ingredients

  • 1/4 cup butter
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/2 tsp cinnamon – (I always add a pinch more)

Step-by-Step Instructions to Make Blueberry Buckle

To begin, preheat your oven to 350℉ and grease an 8 or 9 inch glass pie plate (either will work great for this recipe). I usually use a cooking spray to grease. It always works well.

Next step for the blueberry buckle batter, combine the butter, sugar and egg in your mixing bowl, until creamy.

Combine the remaining blueberry buckle batter ingredients into a separate bowl – minus the milk.

Slowly add the remaining dry ingredients to your butter, sugar and egg mixture. Then, gradually add the milk until finished.

A little bit of mixture, a little bit of milk.

When everything is combined, your batter will be very think and sticky.

The last step for the batter is to fold in the blueberries. Because the batter is so thick, some of the blueberries may burst when you fold them in and that’s okay. When you have it mixed well, transfer the batter into the pie plate.

How To Make The Streusel Topping

The topping for the blueberry buckle is simple to make.

For this step, all you need to do is combine the streusel ingredients until they become a crumble consistency. I usually use a fork to mix it.

Make sure you don’t over-mix the streusel. You want it to be a little chunky.

Once the streusel is combined, add the crumble to the top of the blueberry buckle batter.

Into the oven it goes for 50-55 minutes.

As you can see, this is a simple recipe that anyone can make. My family and friends love it and request it often! It’s a great treat for breakfast served with tea or coffee. And what’s even better…heating a piece and adding some butter!

Blueberry Buckle – Frequently Asked Questions

They’re very similar! A buckle has more fruit folded directly into the batter and a thicker, more generous crumble topping. Think of it as coffee cake’s more fruitier, more indulgent cousin.

Although I prefer fresh, you can use frozen blueberries. If you are using frozen, do not thaw them, add them directly from the freezer into the batter. This helps the batter from turning purple and keeps the berries from getting mushy.

You can! Bake it the day before and store it covered at room temperature. It’s honestly just as good the next morning or day with a hot cup of coffee or tea.

An 8 or 9 inch glass pie plate both work great for this recipe. Either size gives you the perfect ratio of cake to crumble in every bite!
