It’s time for another Mimi and Me project, and these frozen banana bites are the perfect quick and easy summer treat that’s both delicious and fun to make. Whether you’re looking for a healthy snack or a sweet way to beat the heat, these kid friendly bite-sized goodies are a delightful way to bring a little joy and sprinkles to your summer days!

Frozen Banana Bites: A Mimi and Me Summer Favorite

My grands love sprinkles. Sprinkles on pancakes, ice cream and just about anything you can put sprinkles on! Trust me, Big Al and I have an abundance of different sprinkles for when they come over.

We typically make crafts, but these yummy bananas with chocolate and sprinkles are right up their alley! Therefore, I thought it would be a fun project for us to do, for our Mimi and Me series.

Simple Ingredients for the Perfect Frozen Banana Snack

You don’t need much to make these no-bake frozen banana bites. They’re so simple to make and chances are, you probably already have all the ingredients on hand. For my bananas, I use sprinkles to top the chocolate. However, feel free to get creative and use something else or one of your favorite toppings. Nuts and coconut would work great too!

Simple Ingredients

  • 2 Bananas
  • 3/4 cups Chocolate Chips
  • Sprinkles or favorite topping
  • Parchment Paper

Step-by-Step Instructions

There are only three steps to this summer time snack. It’s as easy as 1-2-3! With just a few simple steps, you’ll have a fun and delicious treat ready for the freezer in no time. Who doesn’t like fast and easy, especially when you are working with kids?!

Step 1 – Slicing Your Bananas

Once you have your ingredients ready to go, I start by slicing my bananas. I used two large bananas and sliced them into ½-inch rounds. Try to keep the slices even so they freeze evenly. I placed the banana slices in a parchment-lined glass baking dish and set them aside while I melted the chocolate.

Banana Buying Tip

Choose bananas that are yellow with no brown spots. If they’re too ripe, they can become mushy when slicing and harder to work with. Slightly firm bananas hold their shape better and are easier for little hands to help with!

Step 2 – Melt the Chocolate Chips

I’ll be the first one to admit, melting chocolate can be temperamental! It seems easy enough, however, more than once in my life, I’ve had to throw away and start over. Just keeping it real here, friends!

I poured my chocolate chips into a microwave-safe bowl and microwaved them for 30 seconds to start. Then, I stirred and continued microwaving in 15-second intervals, stirring each time, until the chocolate was smooth and melted. Be careful not to overheat — if you cook them too long, the chocolate can thicken or clump together. Low and slow is the way to go!

Top with Chocolate and Sprinkles

Once the chocolate is the perfect consistency, I added a chocolate to the top of the banana. You can cover the whole banana if you choose, however, just adding a dollop on top makes it far less messy when working with littles.

Next, add your sprinkles to the top! This was my granddaughters’ favorite part! You can keep it simple or get creative with crushed nuts, mini marshmallows, or even shredded coconut. There’s no wrong way to decorate — just have fun with it!

Once you’ve finished decorating your chocolate banana bites, place them in the freezer for at least 1 to 2 hours or until the chocolate is fully set and the bananas are firm. If you’re making them ahead of time, you can store them in an airtight container in the freezer for up to a week. An important reminder, just let them sit at room temperature for a few minutes before serving so they’re easier to bite into. If you don’t they will be too hard to eat, especially for little ones!

Ingredients
  

  • 2 whole bananas
  • 3/4 cup chocolate chips
  • sprinkles for decorating – nuts, mini marshmallows, and coconut will work great too

Instructions
 

  • Cut bananas in ½-inch rounds laying bananas on parchment-lined glass baking dish, setting them aside while chocolate is melted.
  • Melt chocolate chips for 30 seconds to start. Then, stir and continue microwaving in 15-second intervals, stirring each time, until the chocolate is smooth and melted.
  • Once chocolate is melted and smooth add a small dollop to the top of each banana and top with sprinkles.
  • Place dish in the freezer for 1-2 hours until the chocolate is fully set and the bananas are firm.
  • Let frozen bananas sit at room temperature for a few minutes before serving so they’re easier to bite into.
