Easy to Make with Simple Ingredients

I’m all about simple. Simple DIY’s and simple baking! These pumpkin chocolate chip cookies are surprisingly easy to make with ingredients you probably already have on hand. The dough comes together quickly, and the cookies bake in just a few minutes. Fast and easy!

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt  
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans (or nuts of your choice)

Ingredients

  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup pumpkin puree
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped pecans

Instructions
 

  • Preheat oven: Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  • Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add wet ingredients: Beat in the eggs one at a time, then stir in the vanilla extract and pumpkin puree.
  • Combine dry ingredients: In a separate bowl, whisk together the cinnamon, ginger, cloves, nutmeg, salt, flour, and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in chocolate chips and nuts: Gently fold in the chocolate chips and chopped pecans.
  • Bake: Drop by rounded tablespoons onto the prepared baking sheets. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  • Cool: Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
