Ingredients
  

  • 1 Stick Butter
  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Light Brown Sugar Packed
  • 1 Large Egg
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 1 Cup All-purpose Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 2 Cups Rolled Oats Not Instant
  • 1 Cup Dried Cherries
  • 1/2 Cup Chopped Walnuts

Instructions
 

  • Preheat and Prep: Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  • Cream Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add Egg and Vanilla: Beat in the egg, vanilla and almond extract until well combined.
  • Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  • Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Add Oats, Cherries, and Nuts: Stir in the rolled oats, dried cherries, and chopped nuts (if using).
  • Scoop and Bake: Drop rounded tablespoons of dough onto the prepared baking sheets, leaving some space between each cookie.
  • Bake: Bake for 10 minutes, or until the edges are golden brown and the centers are still slightly soft.
  • Cool: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
